Sweetcorn Fritters

Created for Little Forest Folk Life by Two Teaspoons

Makes approximately 12 fritters

·       250g sweetcorn

·       5 tablespoons double cream

·       3 tablespoons plain flour

·       ½ teaspoon baking powder

·       ½ teaspoon brown sugar

·       Small bunch fresh coriander, finely chopped

·       Pinch of sea salt

·       Few grinds of black pepper

·       Unrefined (cold-pressed) rapeseed oil for frying

 

  1. Put the sweetcorn in a large mixing bowl, Add the cream, flour, baking powder, sugar, coriander, salt and pepper. Mix everything together thoroughly.

  2. Heat a good glug of oil in a heavy, non-stick frying pan on a moderate heat.

  3. Gently, drop tablespoons of the mixture into the pan, flatten them down a little with a spatula and turn then when they are golden and sizzling on the bottom. This takes about 3 or 4 mins each side.

  4. Transfer to a warm plate until they are all ready to serve.

 

The fritters are delicious with mango chutney, salad and wedges of lime to squeeze over the top.
