Introduction

Before you start cooking… a few notes!

Messy. Mixy. Choppy. Tasty. Food’s many things. Above all though, it really is glorious.

We are fortunate to have an amazing team of passionate cooks who prepare and cook all of the dishes for our nurseries. Two Teaspoons are our also our culinary experts and contributors for Little Forest Folk Life. They cook meals that we would all like to eat and so this section is dedicated to sharing these amazing dishes with you. Each recipe has been prepared knowing that all nutritional groups are covered and you’ll see the ingredients lists are full of fresh vegetables, the more variety in each meal, the better!

Vegetables are the foods that do us the most good and our planet the least harm’

Hugh Fearnley-Whittingstall

All the recipes use simple easy equipment most people have in the kitchen. And most importantly, whenever you can, encourage your little ones to get involved with cooking, snipping herbs, weighing lentils and cracking eggs - anything to start understanding the story of where our food comes from and what eating healthily looks like. All these recipes have been thoroughly enjoyed by all ages from tiny tots to great big teenagers! We believe cooking good food for your family should be something that doesn’t feel like a challenge.

Ingredients: These recipes are not designed to be used with pinpoint accuracy. If it says two carrots and you only have one or want to put in an extra three, this is fine. Also, we don’t spend time peeling carrots, just give them a good wash.

Portion size: This is a personal preference but the portion sizes for these recipes will usually serve two adults and will give you six mini pots for a pre-school size portions.

Cooking oil: When we cook veggie food we use a generous amount of oil, you can use extra virgin olive oil and we also like unrefined British rapeseed oil. Olive oil works well our recipes because we don’t do any hard frying, so the oil retains its flavour and doesn’t reach burning temperature.

Storage: All meals included here can be batch cooked and then frozen for ease. Just ensure that food is completely cooled and packaged in an airtight container before it goes into the freezer.

Happy cooking!
